Mini Quiche Recipe

Great for breakfast. Use 2 uncased chicken or turkey sausages instead of ground chicken, or cooked ham.

Recipe Ingredients for Mini Quiche

5 eggs
3 egg whites
1/3 cup cheddar
1 cup skim milk
1 cup ground chicken
1 cup frozen spinach
1 tbsp olive oil

Recipe Directions for Mini Quiche

  1. Brown chicken sausages in olive oil. Meanwhile, mix milk and eggs and egg whites until creamy. Then add cheese and combine. When browned, remove sausages and add to egg mixture. Add spinach and add to oil to deglaze pan and defrost spinach. When heated through, add to mixture. Add salt and pepper to taste.

  2. Put into greased muffin cups. Bake 30 minutes at 325. Cool in pan on rack for 5 minutes, then remove from pan and cool on rack until cook.

  3. To store, put in baggies or wrap in plastic wrap and refrigerate. Reheat for 30-60 seconds on high in microwave.
