Low-calorie muffin-sized pumpkin pies with yogurt cream.

Recipe Ingredients for Mini Pumpkin Pies

3 tbsp wheat germ
2 tbsp ground flax seed
4 graham crackers, crushed
2 eggs
15 ounces pumpkin puree
12 ounces fat free evaporated milk
2/3 cup packed brown sugar
1 1/2 tsp pumpkin pie spice
1 tsp vanilla extract
3/4 cup fat free yogurt
1/4 cup maple syrup

Recipe Directions for Mini Pumpkin Pies

  1. Preheat oven to 350 degrees and coat 12-cup nonstick muffin pan with canola oil cooking spray.

  2. In small bowl, combine wheat germ, flax seed, and crushed graham crackers. Add one heaping teaspoon of mixture to each muffin cup.

  3. Whisk together eggs, pumpkin, evaporated milk, brown sugar, spices and vanilla. Pour evenly into cups. Bake 30 to 35 minutes, until sides are set and filling jiggles slightly.

  4. Mix Greek yogurt with maple syrup and keep cool in refrigerator.

  5. Let pies rest 10 to 15 minutes before removing from tins. Top each with a dollop of yogurt mixture and serve.
