Recipe Ingredients for Mini Pumpkin Pies

16 mini graham cracker crusts
2/3 cup granulated sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1/8 tsp nutmeg
2 eggs
15 oz pumpkin
12 oz fat free evaporated milk

Recipe Directions for Mini Pumpkin Pies

  1. Preheat oven to 425.

  2. Mix sugar, salt, and spices in small bowl.

  3. Beat eggs lightly in large bowl. Stir in pumpkin.

  4. Stir in sugar/spice mix.

  5. Gradually stir in evaporated milk.

  6. Pour into crusts.

  7. Bake for 10 minutes. Reduce oven temperature to 350. Bake for 25 minutes or until knife inserted near center comes out clean.

  8. Serve immediately or refridgerate. (Do not freeze, as filling will separate from crust.)
