really yummy mini muffins - even my son loved them!

Recipe Ingredients for mini pumpkin muffins

1 1/3 cups flour
1/4 cup flax meal
1/4 cup wheat germ
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/3 cup brown sugar, loosely packed
1/4 cup egg white
1/2 cup applesauce
3/4 cup canned pumpkin
2/3 cup lowfat milk

Recipe Directions for mini pumpkin muffins

  1. preheat oven to 350 degrees.

  2. combine all dry ingredients.

  3. combine all wet ingredients.

  4. mix all ingredients together, being careful not to poof the dry ingredients up into your nose!

  5. spray a mini muffin tin (mine has 24 muffins in it) with baking spray, or use muffin cups in the tin.

  6. using a tablespoon, put a heaping tablespoon of the muffin mix into each muffin tin.

  7. bake about 15 minutes - might need a minute or two more - until muffins are springy to the touch.
