Recipe Ingredients for Mini Pizzas

2 cups whole wheat flour
2 cups all purpose flour
1 tsp salt
1 tsp sugar
4 1/2 tsp dry active yeast
2 cups warm water
2 tbsp olive oil
1 1/4 cup pasta sauce
1 tbsp garlic, minced
1 tsp dried oregano
1 tsp minced onion
1 tsp dried basil
1 tsp dried parsley
1/3 cup parmesan cheese
1 tsp olive oil
3 cups shredded cheese
2 tbsp cornmeal

Recipe Directions for Mini Pizzas

  1. In an electric mixing bowl, stir together 2 1/2 cups of the flour mixture with the yeast, salt and sugar. While mixing, gradually add warm water and olive oil. Mix on low for 30 sec. Slowly add the rest of the flour and mix on high for a few minutes (with the dough hook.) Divide in half and sprinkle with flour. Cover with a lightly greased plastic wrap and let sit for at least 10-20 min.

  2. Preheat oven to 425. Lightly grease a baking sheet and sprinkle with cornmeal.

  3. In a small bowl, mix spices, garlic and 2 tbsp parmesan cheese into pasta sauce.

  4. Remove cover from dough and knead on floured surface until smooth. Pinch off small handfuls and roll into balls. Form into approx. 3 inch round pizzas. Spray lightly with olive oil. Spoon sauce, sprinkle parmesan cheese and shredded cheese. Top with parsley.

  5. Bake in a 425 degree oven for 1-12 minutes.
