Makes 16 servings



Makes 4 miniature pizzas, each pizza being four servings. Nice, basic recipe.

Recipe Ingredients for Mini Pizza Dough

1 1/2 tsp. dry yeast
1/2 cup warm water
2 cups all purpose flour, unbleached
1/2 tsp. sea salt
1 tbsp. extra virgin olive oil
1 1/2 tsp. honey

Recipe Directions for Mini Pizza Dough

  1. Combine luke-wark water , honey and yeast. Let sit for 5 - 10 minutes until yeast activates.

  2. Mix sea salt and flour, creating a well in centre. Add yeast mixture and olive oil mix together with a wooden spoon, then with your hands until dough comes together.

  3. Turn dough onto a lightly floured surface. Knead until smooth, shiny and elastic. If it is too sticky or soft, add extra flour. If too dry, add a touch of water.

  4. Shape dough into a ball. Place in a large, lightly oiled bowl, and cover with a damp cloth. Let sit for approximately 45 minutes, or until dough doubles in size. Punch down to remove air.

  5. Tip out dough onto a lightly floured surface. Divide into four, and shape into crusts. Place on a sheet of parchment paper and allow to rise for approximately 20 minutes.

  6. Top and bake.

  7. VARIATION: Bake crusts on their own and store (shelf life uncertain). When desired, top and cook in toaster oven.
