Recipe Ingredients for Mini pineapple upside down cakes - Giant

2 tbsp margarine, melted
1 tbsp Splenda brown sugar blend, packed
20 oz pineapple slices
1 1/4 cups all-purpose flour
1/4 cup Splenda blend for baking, or granulated sugar
1/2 tsp baking soda
5 tbsp unsweetened applesauce or canola oil
1 large egg
3/4 cup Reduced Fat Buttermilk
1 tsp vanilla extract
6 serving Maraschino Cherry

Recipe Directions for Mini pineapple upside down cakes - Giant

  1. Preheat oven to 350. Coat cups of 12-cup muffin pan with cooking spray.

  2. Into each cup, pour 1/2 teaspoon melted butter and sprinkle with 1/2 teaspoon brown sugar. Drain pineapple slices and pat dry with paper towels. If pineapple rings are small, place one slice into each muffin cup. For larger rings, cut out wedges and piece together to fit cups.

  3. In a medium bowl, mix together flour, sugar, baking powder and baking soda. In a measuring cup combine oil, egg, buttermilk and vanilla and mix well. Add liquids to dry ingredients, stirring just until blended (do not overstir). Spoon batter into each cup, spreading to cover pineapple.

  4. Bake at 350 for 20 minutes or until a wooden pick inserted in center comes out clean. Cool for 5 minutes, then invert onto a wire rack. Cool completely. Place half of a red grape on top of each pineapple slice.
