Brownies with mini PB cups from Trader Joe's. Can chop up Reese's minis if you don't have these.

Recipe Ingredients for Mini Peanut Butter Cup Brownies

4 oz. unsweetened chocolate
1 cup margarine
1 cup brown sugar
1 cup white sugar
1 tbsp vanilla extract
1 tsp sea salt
1 tsp baking powder
1 cup egg whites
1 1/2 cups flour
2 cups peanut butter chips (TJ's mini-PB cups)

Recipe Directions for Mini Peanut Butter Cup Brownies

  1. Melt chocolate and earth balance in a double boiler.

  2. Stir in sugars, egg whites, extract, salt, baking powder and flour.

  3. Stir in tiny PB cups or chopped mini PB cups.

  4. Spread into greased pan lined with parchment.

  5. Bake at 350 for 25-35 minutes.

  6. Cool and cut into squares.

  7. (Using TJ's mini PB cups, brownies are about 110 calories each)
