Great high protein low calorie breakfast, lunch or dinner. Makes 12 mini omelets in muffin pan (1 serving = 2 mini omlets)

Recipe Ingredients for Mini Omlets with Peppers, Mushrooms and Spinach

32 oz egg beaters
1/2 red bell pepper
1 cup mushrooms
2 cups chopped spinach
1 salt and black pepper to taste

Recipe Directions for Mini Omlets with Peppers, Mushrooms and Spinach

  1. chop all veggies

  2. saute veggies, use pam/non-stick pan

  3. spray pam on muffin tin

  4. put 1-2 tbsp filling in each tin

  5. pour egg beaters until brim of muffin pan

  6. bake at 350 for 30 min
