Mini omlettes that can be placed inside of an english muffin for a gourmet breakfast sandwich. 1 serving=2 mini omlettes. Makes 12 mini omlettes.

Recipe Ingredients for Mini Mushroom and Leek Omlettes

8 eggs
1 pint mushrooms
1 leek
1 tbsp olive oil
1/2 tsp salt
1 tsp ground black pepper

Recipe Directions for Mini Mushroom and Leek Omlettes

  1. chop leek (clean leeks by placing in large bowl filled with water) and mushrooms

  2. sautee veggies in oil

  3. add salt/pepper

  4. let veggies come to room temp

  5. spray muffin tin with pam

  6. portion out sauteed veggies into muffin tin (12 muffin-tin)

  7. beat 8 eggs in large bowl

  8. pour eggs into muffin tin (stir with fork to evenly distribute veggies)

  9. bake 350 degrees for 30 min

  10. let cool to room temp

  11. place in ziplock bags for storage in the refrigerator
