Recipe Ingredients for Mini Mint Chocolate Chip Cupcakes


Cupcakes:
2/3 cup all purpose flour
1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/6 cup butter, unsalted, softened
1/4 cup sugar
1 large egg white
1/2 tsp vanilla extract
1/2 tsp peppermint extract
1/4 cup milk, 1%
1 ounce whiskey
1/3 cup chocolate chips

Icing:
2 tbsp cream cheese, light, room temperature
2 tbsp butter,unsalted, room temperature
1/4 teaspoon peppermint extract
3/4 cups powdered sugar
3 tbsp cocoa powder

Recipe Directions for Mini Mint Chocolate Chip Cupcakes

  1. Preheat oven to 350F. Line baking tin of your choice ? mini muffin pan or regular cupcake pan ? with paper liners.

  2. In a small bowl, whisk together flour, baking powder, baking soda and salt.

  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Mix in half of the flour mixture, followed by the irish cream and milk, then mix in the remaining flour mixture. Stir in chocolate chips.

  4. Distribute batter evenly into prepared muffn cups (each will be roughly 2/3 or 3/4 full).

  5. Bake regular-sized cupcakes for 18-21 minutes.

  6. Bake mini cupcakes for 10-12 minutes.

  7. A tester inserted into the center will come out clean when the cupcakes are done. Tops should be domed and very lightly browned.

  8. Cool on a wire rack before frosting.

  9. Mix all ingredients in a small bowl until smooth. Spread a medium thin layer on top of each cooled cupcake
