a tasty change from traditional larger meatloaf

Recipe Ingredients for Mini Meat Loaves

1/2 cup ketchup
1 1/2 tbsp dijon mustard
1 pounds 93% lean ground beef
3/4 cup finely chopped onion
1/4 cup Organic Breadcrumbs
1/2 tsp salt
1/2 tsp dried oregano
1/8 tsp black pepper
1 large egg, lightly beaten
1 cooking spray

Recipe Directions for Mini Meat Loaves

  1. Heat oven to 400 degrees. Combine ketchup and mustard, stir well with wisk. Reserve 2 1/2 tbsp mixture. Combine remaining ketchup mixture with beef, and next 6 ingredients in large bowl, stirring to combine.

  2. Divide beef mixture in to 4 equal portions, and shape into 4 X 2 1/2 inch loaves. place on jelly roll pan coated with cookong spray.

  3. Spread about 2 teaspoons of reserved ketchup mixture over each loaf. Bake at 400 degrees for 25 minutes or until done.
