Just for kicks bringing some veggies to life Italian style!

Recipe Ingredients for Mini Italian Scramble

1/2 c egg beaters
3 spears asparagus
1/2 c zucchini
1/2 tsp olive oil
1 tsp parmessan cheese

Recipe Directions for Mini Italian Scramble

  1. I thought it fun to take some sliced zuccini, pan seared (in a bil of olive oil) and sprinkle with parmessan cheese on a plate, sear asparagus and place on top and finally scrambe the egg beaters (slightly wet) and top off the stack -

  2. the only thing better than this would be to take a couple of tablespoons of your favorite spagetti sauce and pour it over the top!
