A great way to make a yummy frittata if you don't have an oven safe skillet, or if you want to have good leftovers for the next day! Mix and match veggies with meat or different spices!

Recipe Ingredients for Mini Frittatas

1 1/2 cups potatoes, shredded
1/2 cup chopped onion
2 cups mushrooms, diced
2 garlic clove, minced
1/2 tbsp extra virgin olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 eggs
4 egg whites
1 cup skim milk
2 tablespoons all-purpose flour
1/2 cup Parmesan cheese, grated

Recipe Directions for Mini Frittatas

Saute onions, garlic, potatoes until potatoes are golden brown. Add spinach and spices. Saute until spinach is tender. Mix eggs and remaining ingredients then add in potato mixture. Pour into 12 greased muffin tins 3/4 way full. Bake at 350 for 20-25 minutes.
