Recipe Ingredients for Mini Frittata's

5 eggs
1 cup tomatoes, diced
1/3 cup onion, diced
1/2 cup feta cheese, crumbled
4 slice turkey bacon, cooked & crumbled
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Mini Frittata's

  1. Preheat oven 375. Spray muffin cups with cooking spray.

  2. Beat eggs, add remaining ingredients.

  3. Divide mixture among 12 muffin cups, bake until golden, approx. 11 minutes.

  4. Store cooled frittatas in the refridgerator individually in plastic bags.

  5. Reheat in microwave for breakfast on the go.
