From the "Prevention Magazine". You can also make them regular sized muffins (156 cal.) , but they are filling and one mini muffins (80 cal.) is enough for my appetite.

Recipe Ingredients for Mini Flaxseed Morning Glory Muffins (Prevention magazine)

1 cup bran cereal (All Bran or Fibre One)
2/3 cup soya milk
1 1/4 cup flour
1/2 cup flax seed meal
1 apple (chopped)
1/2 cup brown sugar
4 baby carrots (finely chopped)
1/4 cup flaked coconut
3 tsp. baking powder
2 tsp. cinnamon
1/2 cup egg substitute (or 2 eggs)
1 tbsp. canola oil
1 tsp. vanilla

Recipe Directions for Mini Flaxseed Morning Glory Muffins (Prevention magazine)

  1. Preheat oven to 375 F.

  2. Spray muffin pan with Pam.

  3. In a large bowl, mix together cereal and soy milk. Let rest for 5 minutes.

  4. Stir in remaining ingredients.

  5. Divide batter equally among muffin cups.

  6. Bake 25 minutes.

  7. Immediately remove muffins from pan to cooling rack.

  8. Serve warm.
