Mini-Fish Burgers Recipe

flaked fish made into mild fish patties. Oil not included in recipie as I found I needed more than the recipie called for. I will add oil as a separate item for myself.

Recipe Ingredients for mini-fish burgers

16 oz Tilapia, raw
1 cup White Beans
1/2 cup Parsley
1/4 cup Bread Crumbs
1 large Egg, Whole

Recipe Directions for mini-fish burgers

  1. salt and pepper fish to taste. bake fish in oven at 375 7-10 minutes till flaked, in pan spritzed with oil. (leave oven on after baking fish).

  2. In food processor puree white beans, 1/4 tsp salt and bread crumbs appx 1 minute (or use potato masher).

  3. Mix in egg and then gently work in crumbled baked fish and form into 8 small patties.

  4. Coat ovenproof skillet with cooking spray/oil and preheat over medium heat. Place patties in pan and cook until brown on one side. Carefully flip and then place pan in oven for 5 more minutes to finish (I found they needed more than a spritz of oil to brown and not stick - I will do all on stovetop with non stick pan next time).

  5. Serve patties on small whole wheat bun or rolls with toppings as desired.
