Recipe Ingredients for Mini Eggplant Parmesan

4 ounces eggplant, sliced
1/3 cup onion
5 tsp extra virgin olive oil
5 ounces mozzarella cheese, sliced
3 tbsp parmesan cheese, grated
1 cup tomato sauce

Recipe Directions for Mini Eggplant Parmesan

  1. Fry or crisp in the microwave the thin slices of egglpant; in the meanwhile, make the tomato sauce with extravirgin olive oil, onion and peeled tomato. Slice the mozzarella cheese. Then put one layer of eggplant, one of mozzarella and one of tomato and dust with parmesan.

  2. This amount in a small loaf pan makes three layers of it.

  3. Put 1 tsp of extra virgin olive oil on the top and put in the oven (350 F) for 45 minutes. Last 5 minutes, broil 500 F.
