Recipe Ingredients for Mini Cornbread Muffins

1 cup Cornmeal, Degermed, Enriched, Yellow
1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 oz Clover Honey
4 teaspoon Baking Powder
0.5 tsp Salt, Table
1 medium Egg, Whole
1 cup Milk, Lowfat, Fluid, 1% Milkfat
3 tbsp Vegetable Oil, Canola

Recipe Directions for Mini Cornbread Muffins

  1. Preheat oven to 450. Spray mini muffin pan with cooking spray. Combine all dry ingredients in one bowl. Combine all wet ingredients in another bowl. Blend the wet and dry ingredients together until no longer lumpy. Pour into muffin pan.

  2. bake 20 to 25 minutes or until golden brown
