With a whole Oreo at the bottom of each cheesecake, it's hard to go wrong with these. Two pounds of cream cheese, some oreo pieces, and a few other things are mixed together to top them off before being baked. The cheesecake is creamy and tart and I loved the Oreo pieces adding some texture and great chocolate flavor

Recipe Ingredients for Mini Cookies and Cream Cheesecakes

8 oz Cream Cheese Neufchatel 1/3 Less Fat
8 oz Cream Cheese Original
13 serving Sandwich Cookies
2 large Egg, White
4 oz Fat Free Sour Cream
4 oz Stevia Sweetener
1 tsp Vanilla Extract

Recipe Directions for Mini Cookies and Cream Cheesecakes

  1. - Preheat oven to 275 degrees. Line 20 standard muffin tins with paper liners (preferably white so you can see the Oreo through them!). Place 1 whole cookie in the bottom of each liner.

  2. - In the bowl of an electric mixer, beat the cream cheese on medium-high speed until smooth. Gradually add the sugar and beat until combined. Add vanilla.

  3. - Drizzle in eggs, a little at a time, beating and scraping down the sides as needed. Beat in sour cream and salt.

  4. - Fold in the oreo pieces (10 chopped coarsely) by hand. Divide batter evenly among cookie-lined cups, filling each almost to the top.

  5. - Bake, rotating pan halfway through, about 22 minutes or until filling is set. Transfer to wire racks to cool completely.

  6. - Refrigerate at least 4 hours, or up to overnight, and remove from tins just before serving.

  7. Recipe yields 20 mini cheesecakes.
