Makes 12 large or 36 mini muffins

Recipe Ingredients for Mini Coco-nut Oil Muffins

3/4 cup flour
3/4 cup whole wheat flour
1 cup oatmeal
1/4 cup sugar
1/4 cup splenda no calorie
1 tablespoon baking powder
1/2 cup raisins
1 cup skim milk
1/4 cup coconut oil
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon

Recipe Directions for Mini Coco-nut Oil Muffins

  1. Preheat oven to 400.

  2. Grease muffin tins with unmelted coconut oil or spray with pam.

  3. Mix dry ingredients in large bowl. Blend warmed milk and melted coconut oil in small bowl. Add egg and vanilla and add to dry ingredients. Stir til just moistened. Fill greased mini muffin pans almost full. Bake at 400 for 18-20 minutes. Cool 5 minutes before removing from pan.
