Recipe Ingredients for mini cherry pies

4 cup, without pits Cherries, Sweet
1 cup Sugars, Granulated
1 dash Salt, Table
1 3/4 oz Corn Starch
1/4 tsp almond extract
1 tbsp Butter melted
2 1/4 c flour
1 tsp salt
1/2 c canola oil
6 tbs milk
1/4 c vodka

Recipe Directions for mini cherry pies

  1. Mix cherries, corn starch, sugar, salt together, let sit 10 minutes. drain some of the cherry juice and add the butter & extract. Mix into filling.

  2. Make pie dough, form into 5" squares and place into cupcake tin. Add filing, lay corners over top of each cupcake pie to form top crust leaving open areas for steam to escape. Bake 350 deg oven for `20-25 minutes or until filling is bubbly. When cool glaze with thin, 'liquidy' confectioner's sugar icing.
