Yummy! You can trick your mind into thinking you're eating more of the cheesecake than you really are. Also, this recipe has a lot of room for growth. You can substitute items to make it healthier. You'll need five 4 1/2" mini springform pans for this recipe. Original recipe is from allrecipes.com.

Recipe Ingredients for Mini Cheesecakes!

216 grams graham cracker crumbs (about 3/4 cups)
1 tbsp butter, melted
1 tsp lemon juice
2 tsp lemon juice
16 oz cream cheese
3/4 cup white sugar
1/4 cup whipping cream
2 tbsp whipping cream
1/2 cup sour cream
2 eggs
1 1/2 teaspoon vanilla extract
2 tbsp all-purpose flour

Recipe Directions for Mini Cheesecakes!

  1. Preheat oven to 350.

  2. Melt one tablespoon of melted butter and 1 tsp of lemon juice mixed with graham crackers. Press equal amounts of the mixture into the 5 pans to form the crust. Put them on a plate and put into the fridge while you prepare the filling.

  3. In a bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla, the remaining lemon juice and flour until smooth. Pour filling into prepared crust.

  4. Bake in oven for 35 minutes. Turn the oven off and let the cake cool in the oven with the door closed for a few hours. Remove and let it cool further. Refridgerate overnight.
