Savory breakfast muffins. These can be made with sausage if you prefer, but that increases the calories and fat content.

Recipe Ingredients for Mini Breakfast Pies

2 cups diced ham
1 medium onion, chopped (1/2 cup)
1/2 Green Bell Peppers, chopped
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1/2 cup milk
2 eggs

Recipe Directions for Mini Breakfast Pies

  1. Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.

  2. Stir together ham, chopped onion, chopped bell pepper, and cheese.

  3. In medium bowl, stir baking mixture ingredients with whisk or fork until blended.

  4. Spoon 1 scant tablespoon baking mixture into each muffin cup.

  5. Top with about 1/4 cup ham mixture. Spoon 1 tablespoon baking mixture onto sausage mixture in each muffin cup.

  6. Bake about 30 minutes or until toothpick inserted in center comes out clean, and tops of muffins are golden brown.

  7. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack.

  8. Cool 10 minutes longer, and serve.
