Make ahead of time and freeze. Pop in to the microwave for twenty seconds and BAM! you've got breakfast. Add tofu, turkey bacon or sausage for more protein

Recipe Ingredients for Mini Breakfast Fritta

8 mushrooms
1 onion, medium
1 T olive oil
1 red pepper
1 carrot, medium
16 eggs
6 T water

Recipe Directions for Mini Breakfast Fritta

  1. Chop vegetables finely.

  2. Saute over medium heat until soft.

  3. Season to taste with salt, peper, and available herbs.

  4. Spoon into muffin cups

  5. Mix eggs with water and beat.

  6. Pour over vegetables.

  7. Bake 15 to 17 minutes at 350 degrees until firm.
