Recipe Ingredients for Mini Blueberry Muffins

12 1/2 ounces cake flour
1 teaspoon baking soda
2 teaspoon baking powder
1 pinch salt
1 cup sugar
1/2 cup canola oil
1 egg
1 cup yogurt
1 1/2 cups blueberries

Recipe Directions for Mini Blueberry Muffins

  1. Preheat oven to 350 degrees

  2. In a large bowl sift together flour, baking soda, baking powder, and salt and set aside.

  3. Whisk sugar, oil, egg and yogurt. Add dry ingredients reserving 1 T of dry ingredients and toss with blueberries.

  4. Add 1 cup of blueberries and stir. Reserve 1/2 cup berries.

  5. Spoon into greased (vegetable spray) muffin pans. Sprinkle the remaining berries on top of muffins and press down lightly.

  6. bake at 350 for 15 mins. Store in airtight container for 2 to 3 days.
