Recipe Ingredients for Mini Blueberry Hill Muffins

1 1/3 cups whole wheat flour
1/3 cup Dominion Brown Sugar
2 tsp baking powder
1/4 tsp salt
170 g Greek, Non-Fat, Plain Yogurt
1/4 cup Motts Apple Sauce Natural
1 tbsp flax seed
1/4 tsp vanilla extract
1 1/4 cup fresh blueberries

Recipe Directions for Mini Blueberry Hill Muffins

  1. Preheat Oven 375

  2. Line 24 mini muffin cups with paper liners

  3. In large bowl, combine flour, cornmeal (if have), sugar, baking powder, and salt.

  4. In medium mixing bowl, combine yogurt, apple sauce, flax seed (1 egg), and vanilla. Add yogurt mixture to flour misture. Stir until just combined. Add blueberries and fold in just until incorporated.

  5. Divide into muffin cups. Bake for 15 minutes.

  6. Makes 24 to 33 muffins.
