Mini Beef Pizza Recipe

Delicious miniature pizzas. I used garlic powder in place of garlic because that's what I had on hand. Also, you could use any color of bell pepper, or substitute chopped habanero for chili powder if you really want a kick. If you wanted you could serve these on pitas or any other type of flatbread, just remember to adjust your calories.

Recipe Ingredients for Mini Beef Pizza

1/4 cup plain yogurt, low fat or fat free
2 cloves garlic, chopped
1 dash salt
1 dash pepper
1/4 tbsp olive oil
1/2 green bell pepper, chopped
1/4 onion, chopped
1 tsp ground cumin
1 tsp chili powder
1/2 pound ground beef
2 tortillas
2 tbsp pizza sauce
15 grams part-skim mozzarella

Recipe Directions for Mini Beef Pizza

  1. Preheat oven to 500 degrees. In a bowl combine yogurt and 1 clove of garlic, season with salt and pepper.

  2. In a non-stick skillet heat the olive oil over medium. Add the bell pepper and onion, stirring occasionally. Cook until softened, about 5 minutes. Stir in the remaining garlic, chili, and cumin, cook until fragrant about 30 seconds. Add the beef and cook until no longer pink.

  3. On a baking sheet top each tortilla with half of the pizza sauce, mozzarella, and beef mix and bake until crisp about 8 minutes. Top with the garlic yogurt
