Delicious bite-sized banana muffins. These are just the right amount of something sweet after dinner.

Recipe Ingredients for Mini Banana Muffins

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
2 egg whites
1 cup banana
3/4 cup sugar
3 T. canola oil
1 dash lemon juice

Recipe Directions for Mini Banana Muffins

  1. In large mixing bowl, combine flour, baking powder, baking soda, and salt.

  2. In medium mixing bowl, combine egg whites, mashed banana, sugar, oil and lemon juice.

  3. Add wet mixture to dry and stir just till combined.

  4. Spray muffin pan and pour in dough.

  5. Bake at 350 degrees for about 12 minutes or until toothpick comes out clean.

  6. Cool pan on wire rack a few minutes before removing muffins. Makes about 36 - 40 muffins.
