I make the bread in mini-muffin tins to help with portion control, but you can bake in a traditional loaf pan as well. Just increase the cooking time for 1 hour and 15 minutes.

Recipe Ingredients for Mini Banana Breads

1 cup sugar
1 cup ripe bananas (about three small mashed)
1/4 cup vegetable oil
1/4 cup apple sauce
2 eggs beaten
1 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup almonds

Recipe Directions for Mini Banana Breads

  1. Preheat oven to 350.

  2. Add sugar, oli, apple sauce, and beaten eggs to mashed bananas.

  3. Sift together flour, baking soda, salt, and cinnamon.

  4. Add dry ingredients to banana mixture.

  5. Mix in nuts.

  6. Pour into mini-muffin tins greased with pam.

  7. Bake for about 15 minutes or until toothpick in center comes out clean.
