These mini frittatas may be made ahead of time and reheated, or frozen for up to 2 months

Recipe Ingredients for Mini Bacon and Potato Frittatas

5 skillet cooked slice Thick Sliced Bacon
12 oz Potatoes, Russet, Flesh And Skin
1/2 cup, chopped Onions
1/4 tsp, leaves Thyme, Dried
4 tbsp chopped Chives
2 tbsp Parmesan, Grated Cheese
1/2 tsp Pepper, Black
7 large Egg, White
3 large Egg, Whole

Recipe Directions for Mini Bacon and Potato Frittatas

  1. preheat oven to 375

  2. place potato in a med saucepan; cover with water. Bring to a boil; cook 4 min. drain. finely chop potato.

  3. Cook bacon, crumble and set aside.

  4. Add potato, onion, and thyme to 2 tsp drippings in saucepan; cook 8 min over med-high until lightly browned.

  5. Combine the potato mixture, bacon, 2 tblsp chives,cheese, pepper, egg whites, and eggs, stirring well with a whisk.

  6. Coat 36 mini muffin cups with cooking spray. spoon 1 tblsp egg mixture into each muffin cup. Bake at 375 for 16 min or until llight brown.

  7. cool 5 min, remove frittatas from muffin cups. serve each with 1/2 tsp of greek yogurt & chives.
