These mini quiches can also be baked in a 9 x 13 rectangular or 8-inch round pan.

Recipe Ingredients for Mini Bacon-Broccoli Quiche

6 medium+slices,+cooked+raw+product+packed+20/lb bacon
2 c chopped broccoli
2 cloves garlic
6 eggs, beaten
1 c yogurt
1/2 tsp salt
1/2 tsp pepper
1 c cheddar cheese, shredded, divided

Recipe Directions for Mini Bacon-Broccoli Quiche

  1. Preheat oven to 450 degrees.

  2. Saute broccoli in bacon grease until crisp-tender, about 5 minutes. Add chopped garlic and saute another minute. In a bowl combine all ingredients except 1/2 c cheese. Divide evenly among 12 muffin cups. Sprinkle with remaining cheese.

  3. Bake quiche 15 minutes, or until set in the center.
