A delicious, nearly fat free treat perfect for satisfying a sweet craving or as a quick breakfast. Note: two egg whites can be used in place of one whole egg.

Recipe Ingredients for Mini Apple Muffins

2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
3/4 cup skim milk
1 egg
1/2 cup apple sauce
1/4 cup white sugar
1/4 cup brown sugar
1 cup chopped apple

Recipe Directions for Mini Apple Muffins

  1. Preheat oven to 365 degrees F (190 degrees C). Lightly grease one 12- or 24-cup mini muffin tin. Don't use paper baking cups or the muffins will stick to them.

  2. Lightly beat the egg.

  3. In a separate bowl mix dry ingredients thoroughly.

  4. In a separate bowl, mix remaining ingredients. Gently mix in egg. Add to the dry ingredients. Stir until evenly blended. (Batter will be thick and lumpy)

  5. Fill greased muffin tins.

  6. If desired, take muffins out after 4 minutes of baking and sprinkle some brown sugar and cinnamon on top before replacing in oven.

  7. Bake for approximately 11 minutes, or until a toothpick comes out clean.

  8. Makes about 34 mini muffins.
