Recipe Ingredients for Mini Apple Muffins

1/2 cup wheat bran
1 cup whole-wheat flour
1/4 cup ground flaxseed
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp nutmeg
1 egg, beaten
4 tbsp peanut oil
1/2 cup applesauce, unsweetened
1/4 cup sugar
1/4 cup walnuts, chopped
1 med apple

Recipe Directions for Mini Apple Muffins

  1. mix all dry ingredients together in mixing bowl

  2. mix all remaining ingredients in other bowl

  3. combine both mixtures by stirring slightly

  4. bake in mini muffin pan for 20 min at 350C
