Savory Soup, with a broth base rather than a tomato paste base. Loosely based on Carrabba's Minestrone Soup, but healthier (no butter and less cheese) and better. =) *NOTE: Some of the measurements (mainly of the vegetables) are off due to limitations of the analyzer. It's hard to mess up this scrumptious soup though!

Recipe Ingredients for Minestrone Soup

1 1/2 med onions, chopped
1 tbsp garlic
4 oz Carrots
1 cup chopped celery
1 cup Green Beans
1 3/4 cups cabbage, shredded
1 pkg frozen spinach, thawed and drained
1 cup Kidney beans
1 cup Garbanzo beans
1 cup,+chopped+or+sliced tomatoes
2 cups Water
2 Stock Cubes-beef
1 Chicken stock cube
1 oz Stock Cubes- vegetable
1 tbsp Parsley
1 tbsp Basil
1/2 tsp pepper
1 Potatoes, Boiled
1 shells, macaroni, or etc. oz pasta

Recipe Directions for Minestrone Soup

  1. Sauté garlic and onions in olive oil in a large pot.

  2. Repeat the process adding one at a time- carrots, celery, green beans, cabbage, and zucchini.

  3. Add spinach, potato, kidney beans, garbanzo beans, diced tomato and water.

  4. Add crumbled bullion cubes (Or substitute water & bullion cubes for cans of stock).

  5. Add parsley, basil and pepper.

  6. Bring to a boil, then simmer.

  7. Add uncooked pasta 15 min before serving and sprinkle with Parmesan cheese when serving.

  8. *Note: Pasta will get soggy, so you can also cook it separately and add when you dish the soup.
