Recipe Ingredients for Minestrone Soup

14 oz Aylmer Crushed Tomatoes
0.25 cup Olive Oil
1 tsp Salt, Table
2 medium Carrots
1 medium (2-1/2" dia) Onions
1 stalk Broccoli
1 medium raw Leeks
2 stalk, medium (7-1/2" - 8" long) Celery
1 cup Beans, Snap, Green
2 cup Peas, Green
1 tsp Pepper, Black
1 cup, chopped Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Minestrone Soup

  1. In a large pot, cook the tomatoes in 1 tbsp of olive oil for 15 min. on low heat. Add 2 quarts of water and bring to a boil and add salt, 1 tbsp. oil, carrots, onion, broccoli, leeks, celery, and string beans. Bring to a boil, then reduce heat and simmer for 20 to 25 minutes, adding peas for the last 5 minutes. Add remaining oil and pepper to individual bowls.

  2. In the maintenance stage you can add pasta and serve as a complete meal.
