Recipe Ingredients for Minestrone Soup

2 tbsp. olive oil
1/2 cup onion, chopped
1/2 cup celery, chopped
1 cup zuccini, chopped
1/4 cup carrots, chopped
1 cup cabbage, shredded
1 cup green beans, frozen
4 cups vegetable broth
3 cups water, hot
15 oz. kidney beans
15 oz. white beans
15 oz. tomatoes, petite diced
1 tbsp. parsley
1 tsp. salt
1 tsp. oregano
1 tsp. basil
1/2 tsp. thyme
1/2 tsp. black pepper
1/2 tsp. red pepper, crushed
1/2 tsp. garlic powder
1/2 cup noodles, small shells

Recipe Directions for Minestrone Soup

Combine first seven ingredients in a large pot. Saute for 7 to 10 minutes. Add remaining ingredients, except spinach and pasta shells. Bring to boil and turn heat to low. Simmer for 20 minutes. Add spinach and shells. Continue to simmer for 20 more minutes. Serve hot.
