This soup takes about 1 1/2 hours all together. A very satisfying winter meal.

Recipe Ingredients for Minestrone Soup

1 1/2 tbs. olive oil
1 cup chopped red onion
1/4 cup chopped green onion
2 cloves garlic, minced
3 cups water
4 cups vegetable broth
2 red potatoes, diced
2 cups sliced zucchini
4 cups chopped fresh spinach
16 oz. whole tomatoes, including juice from can
1/8 tsp. Black pepper
1/2 cup freshly grated Parmesan

Recipe Directions for Minestrone Soup

  1. In a large pot, oil over medium heat. Add onion, green onion, and garlic. Sauté, stirring occasionally with a wooden spoon until onions are soft and transparent.

  2. Add water, borth, potato, zucchini, and spinach. Break tomatoes into bite-sized pieces and add along with the juice from the can. Season with salt and pepper.

  3. Increase heat and bring to a boil, then reduce heat to low. Simmer, uncovered, for one hour.

  4. Taste and season with more pepper or salt if needed. Ladle soup into bowls and garnish with Parmesan cheese.
