This is a healthy low fat, low sodium soup that will satisfy anyone.

Recipe Ingredients for Minestrone Soup

2 cups organic cannellini beans (white kidney beans)
1 cup cranberry beans, boiled, no salt
4 cups Organic Low Sodium Chicken Broth
4 cloves garlic, crushed
2 medium carrots, peeled and diced
1 medium onion, peeled and diced
1 cup sliced celery
2 1/2 cups chopped roma tomatoes
1 cup potatoes, peeled and diced
1/4 cup balsamic vinegar
1/2 teaspoon dried marjoram
1 cup zucchini, diced
1/2 pound kale, chopped coarsely

Recipe Directions for Minestrone Soup

  1. Drain and rinse beans.

  2. Heat a non stick skillet over medium high heat. Spray with cooking spray and add the garlic, carrots, onions, and celery. Saute' until tender.

  3. In a large pot, add the beans and vegetables, tomato, potatoes, balsamic vinegar, parsley, marjoram, and chicken stock. Bring to a simmer over medium heat and cover and cook for about 1 hour.

  4. Add zucchini and kale and stir. Simmer for another 30 minutes uncovered.

  5. Remove from heat place soup in a terrine and serve. Make sure you have plenty of Parmesan cheese for garnish.
