quick almost vegetarian soup (except broth)

Recipe Ingredients for minestrone soup

2 tsp olive oil
125 g onion, raw
3 cups chicken broth
200 g zucchini, raw
145 g carrots, raw
15 ounces great northern beans
110 g celery, raw
1/2 tsp basil, dried
1/4 tsp salt
1/4 tsp oregano, dried
1/8 tsp pepper, ground black
14 1/2 ounces diced tomatoes
2 cloves garlic
30 g ditalini

Recipe Directions for minestrone soup

  1. saute onion 4 minutes

  2. add rest of ingredients through garlic and simmer 25 minutes.

  3. add pasta, cover, and cook 10 minutes.

  4. serve with grated parmesan (or asiago)
