I have never made this before but I want to save it for future reference. It is high in protein and low in fat. Sounds delicious too!

Recipe Ingredients for Minestrone Soup

1 medium onion, chopped
2 medium carrots, sliced
1 small red potato, chopped
2 stalks celery, diced
1 medium zucchini, sliced
2 teaspoons minced garlic
4 cups vegetable broth
28 oz crushed tomatoes
15 oz kidney beans
1 1/2 cup macaroni

Recipe Directions for Minestrone Soup

  1. Put everything minus the macaroni into the crock pot. Season to taste. Cook on low for 8-10 hours (4-5 on high)

  2. Add macaroni 45 minutes before soup is to be served. Serve when macaroni is tender. Season to taste.
