Recipe Ingredients for Minestrone Soup

5 tbsp Olive Oil
2 leek Leeks, chopped (Bulb And Lower Leaf-portion)
4 medium Carrots, chopped
2 medium Squash, Summer, Zucchini, Includes Skin, thinly sliced
8 oz Beans, Snap, Green, cut into 1" pieces
2 stalk, large (11"-12" long) Celery, finely chopped
1/2 medium raw Bell Pepper Green, chopped
2 quarts Vegetable Cooking Stock
4 cup (8 fl oz) Water
2 lbs. Tomatoes, Red, Ripe, diced
1 1/2 tbsp, ground Basil, Dried
1 tablespoon(6 g) Oregano
31 oz (2 cans) Cannellini Beans
1 cup dry Elbow Macaroni
2 tsp Pepper, Black
1 dash salt

Recipe Directions for Minestrone Soup

  1. Heat olive oil in a large saucepan, over medium heat. Add leeks, carrots, zucchini, green beans celery and pepper. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally.

  2. Stir in the stock, water, tomatoes, basil and oregano. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes.

  3. Stir in the cannellini beans with liquid and pasta. Simmer for an additional 10 minutes, or until pasta is al dente. Season with salt and pepper to taste before serving.
