Recipe Ingredients for Minestrone Soup-Homemade with Red Wine

4 tbsp olive oil
4 oz bacon, (5 slices) cut small
2 large onions, sliced
2 cloves garlic
56 ounce whole tomatoes
1 cup white beans, small
2 cups red kidney beans
1 cup red wine
12 cups water
1 tsp marjoram
1/2 tsp thyme
1/2 tsp basil
8 ounce baby carrots
4 medium red potatoes, cubed
3 medium zucchini
1 cup semolina
2 cups cabbage

Recipe Directions for Minestrone Soup-Homemade with Red Wine

  1. Saute the first 4 ingredients

  2. Add tomatoes, beans, red wine and water

  3. Add spices

  4. Simmer on low for two hours

  5. Add carrots, cook 10 minutes

  6. Add potatoes, cook 5 minutes

  7. You can remove some at this point to freeze. Cool then freeze.

  8. Add zucchini, pasta, cabbage

  9. Cook 8 minutes

  10. Frozen minestrone - thaw, add veggies and pasta, cook 8 minutes and you're done.
