Recipe Ingredients for Minestrone Soup - fast & light

7 oz onion diced
5 tablespoon garlic minced
4 oz Celery
8 oz Carrots
1 jalapeno pepper
1/2 cup Mushrooms
1 tablespoons olive oil
5 cups Vegetable Broth
7 oz zucchini
16 oz frozen green beans
425 g g) Beans Chick Peas
411 g diced tomatoes
1 tablespoon Italian seasoning

Recipe Directions for Minestrone Soup - fast & light

  1. Prep all raw vegetables and all except zucchini saute in Olive oil until tender stock pot.

  2. Add bullion zucchini, frozen vegetables, 1 can chick peas drained, 1 can diced tomatoes and Italian seasoning. Bring to boil reduce to simmer 10 to 15 minutes.
