soup w/prosciutto and veggies, topped with parmesan

Recipe Ingredients for Minestrone

4 tbsp olive oil
1 onion
1 carrot
1/2 c prosciutto, minced
1 c leeks
2 c squash, pumpkin
1 c beans
5 c chicken broth
1/2 c parsley
1 c tomatoes, chopped with juice
8 tbsp Parmesan cheese

Recipe Directions for Minestrone

  1. Saute diced onion and carrot in olive oil, until softened, 5 minutes

  2. Add ham and cook 3 minutes, stirring

  3. Add remaining veggies, season with salt and pepper and cook stirring for 1 minute

  4. Add stock, tomatoes, parsley

  5. Turn heat to med-low and cook until veggies are soft, about 30 minutes
