Traditional Italian Vegetable Soup

Recipe Ingredients for Minestrone

14 g. olive oil
211 g. onion
192 g. celery
200 g. carrots
408 g. turnips
25 g. garlic
10 g. Bouillon
411 g. diced tomatoes
170 g. tomato paste
439 g. cannellini beans
212 g. frozen green beans
646 g. zucchini
20 g. Italian
1/2 t. crushed red pepper
118 g. da vinci 100% whole wheat elbows

Recipe Directions for Minestrone

  1. Sweat onion, celery and carrots in olive oil until translucent.

  2. Add garlic and saute 2 minutes.

  3. Add broth, water, juice, sauce, beans and tomatoes. Bring to a boil.

  4. Add green beans, squash, and spices. Simmer over low heat for 40 minutes to an hour.

  5. In last 15 minutes of cook time, add orzo. Simmer until pasta is tender.

  6. Serve with grated parmesan.
