Minestrone Soup (without bacon/pancetta)

Recipe Ingredients for Minestrone

2 tbsp olive oil
2 red onions
2 carrots
1 leek
3 cloves garlic
150 g spinach
1 pint beef stock
1 pint water
800 g tinned tomatoes
150 g beetroot
125 g dry pasta
3 tsp basil
3 tsp oregano
1 tsp salt

Recipe Directions for Minestrone

  1. Dice all the vegetables.

  2. Fry up the onions, garlic, carrots and leeks in the olive oil.

  3. Add the other vegetables and fry for a minute more.

  4. Add the beef stock and tomatoes.

  5. Bring to the boil and season to taste.

  6. Add the pasta and leave to cook for 4 minutes.

  7. Add more water if required.

  8. Serve with parmesan if you fancy.
