Homemade, vegetarian minestrone. Serve with crusty bread.

Recipe Ingredients for Minestrone

1 3/4 cups kidney beans
1 3/4 cups cannellini beans, canned
3 large carrots, sliced
1 cup celery, diced
2 medium onions, diced
28 ounce crushed tomatoes
2 cloves garlic
1 tsp italian seasoning
1 tsp salt
1/4 tsp pepper
1 tsp dried parsley
3 tbsp olive oil
4 ounces penne pasta
1 cup zucchini, sliced
16 ounces green beans
28 ounces water

Recipe Directions for Minestrone

  1. Heat olive oil over medium high heat in large stock pot. Add onions, celery, carrots and garlic, sauteeing until softened.

  2. Add kidney beans, cannellini beans, green beans, zucchini, tomatoes , Italian seasoning, parsley, salt and pepper. Gently stir together. Add water. Bring to boil over high heat. Reduce heat and simmer for 1 hour.

  3. While simmering, in separate stock pot, bring 1 gallon water with 1/2 tsp salt to boil. Add pasta and cook until al dente. Drain. Add pasta to soup at last minute.
