Makes 6 servings



Good way to use garden produce. Mix and match as your ingredients dictate. Can add 1/3 cup or so of pasta to the soup, top with parmesan cheese, etc.

Recipe Ingredients for Minestrone

1 onion
4 stalks celery
2 carrots
3 cloves garlic
1 cup green beans
2 cups kale
2 zucchini
1 tsp oregano
1/2 tsp black pepper
4 cups vegetable broth
2 cups water
2 cups beans

Recipe Directions for Minestrone

  1. chop onion and saute in water or broth.

  2. slice celery and add to onions.

  3. mince carrots and garlic and add to onions. saute until soft. add the green beans (fresh, cut in small pieces), chopped kale, oregano, broth and bring to simmer. add the zucchini and beans. simmer gently.
