Minestrone soup with cannellini beans.

Recipe Ingredients for Minestrone

5 ml olive oil
65 g onion, chopped
55 g celery, chopped
25 g carrot, chopped
205 g tomato
67 g cannellini beans (dry weight)
130 g savoy cabbage, washed and shredded
50 g courgette, , chopped into cubes
1 pt water
1 tbsp tomato puree

Recipe Directions for Minestrone

  1. Soak and cook the beans until tender.

  2. Sautée onion in oil.

  3. Add celery and carrot and cook until tender.

  4. Add the courgette, tomato and beans and shredded cabbage.

  5. Add the stock or water.
